Chocolate Guinness Cake
Recently someone on Facebook asked for a UK based recipe for a Guinness and Chocolate cake (i.e. using grams instead of US cups). So I dug through my recipes and found this one. Once made, it is supposed to look like a pint of Guinness. I must add, I haven’t tried this recipe yet so I would love to hear from anyone who tries it.
Ingredients for the Cake:
- 200ml Guinness
- 170g plain flour
- 2 medium eggs, beaten
- 300g dark soft brown sugar
- 60g cocoa powder
- 115g margarine
- 1/4 tsp baking powder
- 1 tsp. bicarbonate of soda.
To Make the cake:
- Heat oven to 180C
- Grease two 8″ round baking tins.
- Mix the butter and sugar together in a bowl and gradually add in the beaten eggs.
- In a 2nd bowl, sift the flower, baking powder and bicarbonate of soda.
- Put the cocoa into a 3rd bowl and stir in the Guinness.
- Fold a 3rd of the cocoa mixture into the butter/sugar followed by an equal amount of flour mixture. Repeat until completely mixed.
- Spread mixture into the 2 tins and bake for 30-35 minutes.
Once the cake has cooled, you will need to make the icing:
Ingredients for the icing:
- 2 tbsp Guinness
- 115g sifted icing sugar
- 115g dark chocolate
- 60g butter
- Optionally – 1 pack ready made white icing (or you could make your own).
To make the icing:
- Melt chocolate in a bowl (use the microwave or heat over a boiling pan of water) then mix in Guinness.
- Beat in the butter, leave to cool for 5 minutes.
- Beat in the icing sugar.
- Before the icing cools, use some of it as the filling for the cake and use the rest to coat the top and sides.
- Optionally – cover the top with white icing to make it look like a pint of Guinness.
And you are done!
